My son has been going through outrageous growth spurts. He now wears the same shoe size as his 9 year old cousin. We always joke about how our shoe bill is going to be sky high by the time he hits 14. I have some pretty ginormous men in my family, so I’m already setting up a savings for his “shoes”, alone :D.
As those of you with kids (especially boys) all know, they never seem to get full. Shelf bought snacks only last for a minute in my house, so just recently I thought about an idea of making snacks in bulk, since I am a fan of making bulk food and freezing it. First on the list of savory snacks……….
Puppy Chow (Ingredients needed for “50” servings) :
* 12 1/2 cups of chex rice cereal squares
* 2/3 cup and 1 teaspoon of peanut butter
* 1- 1/3 cups and 1 tablespoon of semi-sweet chocolate chips
* 2 cups and 1 tablespoon of confectioners’ sugar.
prep time (5 min); cook time (5 min); Ready in (10 min)
1.) In a saucepan over low heat, melt the chocolate; add peanut butter and mix until smooth.
2.) Remove from heat and add cereal and stir until cereal is completely coated.
3.) Pour powdered sugar into a large plastic bag, add coated cereal and shake until well coated with the sugar. Store in an air tight container.
Doc Mcstuffin’s no bake strawberry/banana muffins (Ingredients needed):
* 1/3 cup of shredded coconut (no sugar added)
* 1 1/3 cup of instant (uncooked) oatmeal
* 1 pre-sliced banana
* 1/4 cup of strawberry preserves
* 1/3 cup of raisins or chopped walnuts
* 1/2 tablespoon of almond butter (or sunflower seed butter)
* 1/3 cup of pre sliced strawberry’s
Prep time (5-10 min); cook time (20 min); ready in (2 hrs or let chill overnight)
1.) Use a fork to mash the banana in a bowl.
2.) Add the unsweetened shredded coconut, instant oatmeal, strawberry preserves, raisins or chopped walnuts, mix and sit it aside.
3.) Using non-stick cooking spray, spray your muffin tin and scoop banana – oatmeal mixture into each muffin tin.
4.) With a spoon, place either the almond butter or the sunflower seed butter on top of the muffins and garnish the muffins with a sliced strawberry on each.
5.) Refrigerate the muffins over night, or let sit in the fridge for 2 hours, and then serve.
Cheerio trail mix ~~~ My recipe (Ingredients needed):
* 3 cups of honey nut cheerios (or any off brand honey oats)
* 1/2 cups of almonds
* 1/2 cups of Walnuts
* 1-1/2 cups of Banana chips
* 1 cup of Dried cranberries
* 2 cups of oatmeal clusters
Prep time (5 min); Cook time ( 5 min); Ready in (10 min)
1.) In a large bowl, combine all ingredients
2.) Mix with a spoon or spatula
3.) Store in separate baggies so that you can grab and go……whether going on a long trip, visit to the park, etc.
4.) Or store in an air tight container.
(Peanuts, nuts and peanut butter in these recipes can be substituted)
